Pasta-less Lasagna

This is a fabulous recipe that one of my most loyal followers and best friends gave me. I’m not a huge fan of pasta, my carb of choice is bread, the fresher the better. Give me a slice of fresh bread and some honey and I am in heaven. So when she told me about this lasagna recipe I was instantly sold on it. It also has eggplants in it, bonus!

Pasta-less Lasagna

Ingredients:

  • 1 container of ricotta cheese
  • 2 cups tomato sauce
  • 1 package (~450gr) ground chicken
  • 1 onion – chopped
  • 4 garlic cloves – chopped
  • 1 large eggplant – sliced
  • 1 cup mozzarella – shredded
  • salt and pepper to taste

Preperation:

  1. Saute onion and garlic in a little bit of olive oil over medium heat. Add ground chicken and cook until it is browned
  2. Add tomato sauce and keep cooking for about 10 minutes. Add salt and pepper and adjust flavour as needed
  3. Meanwhile preheat oven to 400F
  4. In a 9×9 baking dish layer meat sauce, ricotta and eggplant. Repeat the layers and cover with shredded mozzarella
  5. Cover dish with foil and bake for 45 minutes. Remove foil, switch oven to broil and put lasagna back for a few minutes just to brown the cheese a little
