Moroccan Spiced Chicken Meatballs in Tomato Sauce

This recipe was shared by my girlfriend K. (which we all really miss at work since she left), and I am so glad she shared it because it is delicious! And that’s not really all that surprising because all the recipes she shares are pretty awesome. This one has to be one of my favorites though. The cinnamon, cumin and green olives give such a unique flavour to the meatballs, it’s so good! Check out the recipe below the pictures.

Moroccan Spiced Chicken Meatballs in Tomato Sauce Recipe

Ingredients:

  • 2 tbsp vegetable oil
  • 1 onion – finely diced
  • 5 cloves garlic –  minced
  • 2 tsp paprika
  • 1 tsp  cumin
  • 2 tsp Frank’s Red Hot
  • 1/2 tsp  salt
  • 1 can 28oz whole tomatoes

Meatballs:

  • 1 small onion, grated
  • 1 egg
  • 1/3 cup bread crumbs
  • 1/3 cup chopped fresh cilantro
  • 1/4 cup finely chopped green olives
  • 1 tsp  cumin
  • 1 tsp  dried oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp cinnamon
  • 1-1/2 lb ground chicken
  • 2 tbsp vegetable oil

Preparation:

  1. In shallow Dutch oven, heat oil over medium-high heat; sauté onion until golden, about 6 minutes.
  2. Add garlic, paprika, cumin, Frank’s Red Hot, salt. Cook, stirring, for 2 minutes. Stir in tomatoes, breaking up with spoon. Bring to boil; reduce heat and simmer until thickened slightly, about 1 hour.
  3. Meanwhile, in large bowl, stir together onion, egg, bread crumbs, coriander, olives, cumin, oregano, salt, pepper and cinnamon; mix in chicken. Shape by about 2 tbsp into 16-20 balls.
  4. In large skillet, heat oil over medium-high heat; brown meatballs, in batches and turning often, 8 to 10 minutes. Tip: replace the oil with clean oil for each batch – it will prevent splatter a little
  5. Drain on paper towel–lined plate. Add meatballs to sauce and simmer for 20 minutes.
  6. Serve on a bed of couscous and enjoy!
