Veggie Frittata with Feta Cheese

Breakfast is my favorite meal of the day. Did I mention this already? I love spending time making elaborate breakfasts. I wish I had time to do this every morning but during the work week I am usually scarmbling to inhale some cereal quickly and not be late. I’m always late.

Frittata Recipe


  • 2 tbsp grapeseed oil
  • 1 small onion – chopped
  • 1 small tomato – chopped
  • 1 orange pepper – chopped
  • 2 garlic cloves – minced
  • 5 white mushrooms – sliced
  • 6 eggs
  • 1/3 cup milk
  • 1 tbsp Frank’s Red hot
  • 1 tsp Cajun seasoning
  • salt and pepper to taste
  • 2 tsp chicken soup powder
  • 2tbsp feta cheese – cut into chunks


  1. Preheat oven to 350F
  2. Heat oil in a Dutch oven over med heat
  3. Add onions, garlic, pepper, mushrooms and tomatoes and saute until soft – about 15-20 minutes
  4. Season with salt, pepper and cajun seasoning
  5. In a large bowl beat eggs with milk, Frank’s Red Hot sauce and chicken soup powder
  6. Pour egg mixture over the veggies and cook until the sides are fully cooked – about 12 mins
  7. Sprinkle the feta on top, cover and bake in preheated oven until the top is cook (remove lid if it takes too long) – about 30 mins
