Why do fried things taste so much better? Seriously? It’s not fair. This Cajun chicken fingers recipe has a healthy alternative, baking. Which is what we opted for, just trying to be a little more healthy. And it’s not that the chicken fingers weren’t tasty, they were. But I can just imagine how much better they would have been if fried.
To combat the slight dryness of the chicken I made a little dipping sauce: Curry ketchup: 2 tbps of ketchup + 1 tsp of curry powder. Delicious and also goes *really* well with sweet potatoes.
The roasted beets n’ sweets were amazing! I love beets, but never have ideas on how to cook them, this will be my go-to recipe for beets now, so good!
