Actually, it’s not Thai at all. My adaptation of this recipe has turned it into an Indian dish instead of Thai. I couldn’t find yellow curry paste or have everything needed to make it, so I resorted to Madras Curry spice blend I have.
I mixed 3 tbsp of Madras curry with olive oil and some white vinegar to make a paste. It came out well actually and mighty spicy, I loved it. Next time I will definitely try it with yellow curry paste.
