Slow cooker chicken and sweet potato chili

This recipe has become a favorite of mine recently. I love the spices in this dish, so fragrant and flavorful! It’s not all that pretty, but it is spicy and delicious!  Don’t let the long ingredient list intimidate you, it’s mainly spices. This is a really easy recipe. Let the slow cooker do the work for you while you’re at work and come home to a ready dinner. That’s what I like to do.

Ingredients:

  • 1 tbsp olive oil
  • 1 onion – chopped
  • 4 garlic cloves – crushed
  • 1 lb hot Italian sausage meat
  • 1.5 lb ground chicken
  • 1 tbsp chili powder
  • 1.5 tbsp grill seasoning (I used Cajun seasoning)
  • 1.5 tbsp cumin
  • 1 tbsp coriander
  • 1/2 tbsp chipotle chile powder
  • 1/2 tbsp smoked paprika
  • 1.5 cups crushed tomatoes
  • 1 3/4 cups chicken broth
  • 1/2 tsp whole pepper corns
  • 1 1/4 cup chopped, raw, sweet potatoes

Preparation:

  1.  Heat oil over medium heat in a large pan
  2. Saute onion for 3-4 minutes
  3. Add garlic and cook for 1 minute
  4. Add sausage meat and ground chicken, cooked until fully cooked
  5. Drain off 1/2 cup of fat then add all spices, stir well
  6. Put contents of pan in slow cooker, add tomatoes, chicken broth, pepper corn and sweet potatoes. mix well
  7. Cook on low heat for 6 hours or on high heat for 3 hours.
