Butternut squash and apple soup

This is a favorite of mine for fall and winter. A friend of mine brought this to a potluck once and I was hooked. I love anything to do with butternut squash so it wasn’t a surprise. This is a super easy recipe anyone can make and the results will impress any foodie.


  • 1 butternut medium squash – diced into 1 inch pieces
  • 1 sweet apple – cored, peeled and diced
  • 1/2 cup apple cider/juice
  • 2-3 tbsp butter
  • 1 large sweet/red onion – sliced
  • 4 cups chicken broth
  • pinch nutmeg
  • salt and pepper to taste


  1. In a large pot melt the butter over medium heat
  2. Saute the onion
  3. Add apple, squash, apple juice, broth, nutmeg, salt and pepper
  4. Bring to a boil
  5. Reduce heat and simmer for about 30 minutes or until the squash and apple are tender
  6. Remove from heat, blend using an immersion blender until smooth
  7. Garnish with sour cream and chives
